I am really being dense here but after checking everything again, I still do not see "AppInsight Applications" | "Microsoft Exchange Server" showing up under any of our exchange servers when we go to Manage Nodes and the select a server and click "List Resources". I did not switch the nodes to WMI, but the other requirements were met.
Strangely enough, I also do not see "Windows Scheduled Tasks" under any of our Windows 2008 R2 nodes - I only checked 5 but all have scheduled tasks. I'll freely admit I didn't get that far in the Admin guide, so if there is some requirement for it to show up, we haven't completed it yet.
